Wheat-free banana walnut loaf



  • 4 ripe bananas

  • 4 eggs

  • ½ cup of almond butter

  • 4 tbsp of melted (real) butter

  • 1 tbsp of honey

  • ½ cup of coconut flour

  • 1 tsp of baking powder

  • 1 tsp of bicarbonate of soda

  • ½ tsp of salt

  • 1 tbsp of ground cinnamon

  • 1 tsp of vanilla essence

  • 1 cup of chopped walnuts




Preheat the oven to 180 C (350 F). Mix the bananas, eggs, almond butter, butter and honey in a food processor. This can be done by hand if you mash the bananas with a fork first. Add the coconut flour, baking powder, bicarbonate of soda, salt, cinnamon and vanilla essence and mix thoroughly. Stir in the chopped walnuts by hand. Line a loaf tin with greaseproof paper. Pour the mixture in the tin and bake for 50-60 minutes, until a skewer comes out clean.


Serves 8-10 (or 2 in our house)
