Thai Style Meatballs
Ingredients:

1 kg minced beef
3 tbsp Thai red curry paste
4 tbsp fish sauce
handful chopped coriander leaves
3 carrots finely chopped
200 g mushrooms finely chopped
1/2 tsp salt
1 large egg

Method:

Preheat oven to 180C (350F). Mix all the ingredients together, hands works best. Form balls (golf ball size) and place on a tray in the oven for 20 minutes. Turn over and cook for another 10 minutes. This will make a lot of meatballs (around 26) but they can be frozen or kept in the fridge for a few days. They are lovely snacks and perfect for lunch boxes. I served them with some stirfried vegetables with tamari and chilli sauce.
