Stir-fried veggies with egg on top
Ingredients:
Cavolo nero
Mushrooms
Red onion
Spiralised (or finely sliced) carrot
3 tbs of ghee, coconut oil or olive oil
1 tsp of chilli flakes
salt to season
2 free-range eggs
Method:
Heat 2 tbsp of ghee or oil in a frying pan. Add the onion and mushroom and stir-fry until the onions go soft and the mushrooms turn brown. Add the carrot and cavolo nero and stir-fry for 3 minutes. You can use kale or any other greens instead of cavolo nero and add any other vegetables you have lurking around. Stir in the chilli flakes and season. In a small frying pan heat 1 tbsp of oil and fry the eggs. Serve the vegetables with the fried eggs on top.
