Raw carrot cake bites

Ingredients:

 

1 ½ cup of grated carrot (squeeze water out before measuring)

1 cup of pecan nuts or walnuts

¾ cup of desiccated (or shredded) coconut plus extra to roll the bites in

1 tsp of salt

1 heaped tsp of allspice

1 cup of pitted dates

2 tbsp of coconut oil

1 tbsp maple syrup

 

Method:

 

Put the nuts in a food processor and blitz into very small bits. Add the coconut, salt and allspice and blitz for a few seconds. Add the dates, carrot, coconut oil and maple syrup and mix in the food processor until it turns into a thick paste. Put some desiccated coconut on a plate. Roll the paste into walnut-sized balls and then roll them into the desiccated coconut. Put in the fridge for half an hour to stiffen up and enjoy! Keep the bites stored in the fridge.
