Low-carb sushi



4 Nori sushi sheets

1 small cauliflower

100 g smoked salmon

1 avocado

2 tbsp rice vinegar

1 tsp salt

tamari sauce




Cut the florets off the cauliflower and blitz in a food processor into small bits, like rice. Put in a bowl, cover with pierced clingfilm and micro-wave for 6 minutes. Mix the salt and vinegar with the cauliflower. Put some cauliflower along the middle of a nori sheet, roughly covering half of the sheet, leaving a little space on either side and some more spce at the top and bottom. Put a quarter of the sliced avocado and a quarter of the smoked salmon along the middle of the rice. Pick up the nori sheet on one end and roll over the filling. Wet the other side of the nori sheet with some water to make it sticky before sealing the roll. Cut the roll in slices with a very sharp or serrated knife. Serve with tamari sauce.
