Bacon and fennel salad

Ingredients:

6 rashers of smoked streaky bacon

2 handfuls of rocket

1 fennel bulb

1/2 apple

handful of raisins

Extra virgin olive oil

Balsamic vinegar

Method:

Heat the oven to 200C. Line a baking tray with kitchen foil, place the rashers on it and put in the oven.

Whilst the bacon is cooking slice the fennel and apple very finely. Place the rocket in a bowl. Toss in the apple and fennel and mix in the raisins.

When the bacon is crispy (after about 15 min but do check regularly) break it up in bits and put on the salad. Pour over some olive oil and balsamic vinegar and enjoy!
