Egg on

If, God forbid, I could only eat one food for the rest of my life I would choose eggs. Eggs are one of the most nutritious foods available to us; just think about it, one egg contains all the ingredients to build a whole baby chicken! Eggs are full of healthy fats, high-quality proteins (all 9 essential amino acids), vitamins and minerals. It is a great source of choline, which is an essential nutrient that is, amongst other things, important for brain and liver health.

There have been many scare stories about eggs, in particular with regards to the cholesterol content. Eggs do contain a relative large amount of cholesterol, around 212 mg per large egg, but there is no need to worry about this. Many studies have shown that eggs and dietary cholesterol do not have an adverse effect on blood cholesterol. In fact, they improve the overall blood lipid profile by increasing HDL (‘good cholesterol’) and change small, dense LDL (bad for cardiovascular health) into large, fluffy benign LDL.

Eggs are very satiating, which is helpful when you are trying to shed a few pounds. Studies have shown that if you have eggs for breakfast you will eat less the rest of the day. 3 Eggs with some spinach, avocado or mushrooms will set you up nicely for the day.

A little known fact is that eggs are good for your eyes. They contain unique anti-oxidants, Lutein and Zeaxanthine, which gather in the retina and help protect against macular degeneration and cataracts.

It is best to buy organic free range eggs as these come from chickens that are likely to have been fed higher quality food, which affects the nutritional value of the eggs.

I don’t think I need more reasons to egg you on. Eggs are cheap, super-nutritious and tasty!
