Coconut Chocolate Bars
Adapted from a recipe kindly sent to me by Jayne (who got if from Steph)
Ingredients:

For the bars:
- 1 cup of unsweetened shredded coconut
- 1/2 tsp vanilla extract
- 1 tsp honey
- 1/3 cup of coconut cream

For the topping:
- 4tbsp coconut oil (melted)
- 2 tbsp raw cocoa powder
- 1/2 tsp vanilla extract
- 1 tsp honey

Method:

Mix the ingredients for the bars together and spread on parchment paper in a small tin. Press the mixture into a layer about 1/2 inch thick. Put in the freezer for 2 hours (or leave overnight).

When the mixture is frozen, use a serrated knife to cut into bars (or bitesize bits if you like). Mix the ingredients for the topping together. Dip the bars into the cocoa mixture. The topping will solidify quickly as the bars are frozen. You can then dip the other side into the cocoa mixture too if you like, but I decided to just coat the top. Keep in the fridge if you can resist to eat the whole lot in one go ;)
